Fortunately I had this awesome knife I got at an Asian store that did the trick wonderfully.”

“the package gives you directions for storing it after opening. Basically you slice a section to save to place back on it, apply some olive oil and wrap it back up in plastic wrap”

“When you first cut it, you take off layers of fat from the top and partially down the sides. They suggest placing that back on for storage. We do that and cover loosely with a food grade bag and refrigerate, stand and all. They say you don’t even need to refrigerate if your space is less than 70 degrees. They have a great instructional video on YouTube.”

“I sliced ours very thin and then used food saver to vacuum seal. I layered parchment to prevent them from sticking. You can keep it covered with a towel until you finish it, I just felt like I needed to slice and store for later. I also gave some of the sealed packages to my son.”

“Bought one two years ago and it was fine (my parents were born in Spain and both my grandmother and mother cured their own jamones, so l grew up with them too). Great that it comes with the holder and knife too! One word of warning, it comes vacuum sealed. Make sure you remove the plastic and keep the open part covered with the skin you remove, and a kitchen towel. I initially left it in the plastic, then noticed it started getting moldy. I cut it off and it was fine. Just annoyed l hadn’t thought logically about it.”

“If your interior temp gets too warm, the fat will melt and get all over you counter. You could slice it all at once and refrigerate or freeze.”

“We got it last year for Covid Thanksgiving instead of a turkey and it lasted two months on the counter with a cloth over it. (We didn’t finish it but couldn’t eat anymore of it). The knife is sharp too so be careful.”

“I’d heard so many positives about the $99 Serrano ham so I convinced my wife to buy one. Unpacked, waited six hours and cut the fat covering off the top and side few inches. I cut it as thin as I could -with some practice- but as someone posted on Amazon- it tasted like tough shoe leather. I’m going to keep cutting to see if I can work through it but even at $99, I don’t know if I have the nerve to return the thing. Hopefully everyone else’s turns out better than mine.”
