Instructions
- Make the DRESSING for this Vietnamese Green Papaya Salad. (The recipe is available on my website at www.EatWithEmily.com or use the link in the Recipe Notes section below ! )
- Cut off the ends of the papaya so that you can stand it up. Then using a knife peel the papaya.
- Shred the papaya using a vegetable peeler. Shred it down to the core and discard the seeds on the inside of the papaya.
- Place the strands into an ice bath. If you are not going to use all of the papaya then keep the rest in the ice bath. Just cover and store in the fridge. It will keep this way for a few days.
- When ready to use place the shredded papaya into a colander and rinse under cold water. Then squeeze the excess water out of them and set them aside to dry.
- Wash the Thai Basil, pluck the leaves and then give them a rough chop or you can just tear them apart with your hands. Set aside.
- If you are using pre-packaged crushed peanuts than skip this next step. If you are using whole roasted peanuts than you will first need to remove the red skin. Pour the peanuts into a colander.
- Place a bowl or plate underneath the colander to catch the peanut skins.
- Grab a handful of peanuts and rub them between your two hands.
- Once all of the skins have fallen down into the colander give the colander a few shakes. The skins will then fall through the holes of the colander and into the bowl. You can then discard the peanut skins.
- Pour the skinless peanuts into a zip loc bag and then seal it. Use a rolling pin or any canned food from your cupboard to crush the peanuts.
- Once the peanuts have been crushed pour them back into its original container for storage.
- Assemble the salad. Place some of the shredded papaya into a dish.
- Then add a few handfuls of the chopped Thai Basil and sprinkle some of the crushed roasted peanuts onto the salad.
- Next add on a few handfuls of the Sweet Sesame Beef Jerky.
- Then drizzle some of the Vietnamese Green Papaya Salad DRESSING on top of the salad. Toss the salad well.
- Next squeeze some Siracha Hot Sauce over the salad and toss. Wait a few minutes for the papaya to absorb the dressing.
- Then eat and enjoy !
