Artichoke Tea

Ingredients
  

  • 2 Artichokes
  • 12 Cups water
  • 3 Tablespoons Rock Sugar Sweeten to taste. Add more if necessary.

Instructions
 

  • Wash the artichokes and remove the stems.
  • Place the whole artichokes in a pot and fill it with 12 cups of water.
  • Bring to a boil.
  • Then cover with a lid, reduce the heat and simmer for 1 hour.
  • Turn off the heat and remove the artichokes from the pot. Set aside the artichokes for later consumption.
  • Add 3 tablespoons of rock sugar to the pot and stir until the rock sugar is dissolved. Taste and adjust the tea. If you would like it to be sweeter just add more of the rock sugar.
  • Let the tea completely cool before transfering it into a large pitcher.
  • The tea can be refrigerated for 2-3 days. I prefer it served over ice but this tea can be served hot or cold.

Notes

**The tender base of the petals and the artichoke heart is edible. Just scrape off the tender part with your teeth.
