Costco’s Hand Pulled Rotisserie Chicken Breast Meat is sometimes located on the end cap in the deli section across from the rotisserie chickens or sometimes it is placed with the prepared meals.

“I make my mom’s Ecuadorian chicken salad. Cubed boiled peeled potatoes, red bell pepper sliced, red onion sliced, grape or cherry tomatoes halved, frozen peas (nuke them don’t boil them), green olives with pimentos, cilantro or parsley. The dressing is ketchup, olive oil, lemon juice, lime juice, salt and pepper. We serve it with crusty French bread. I don’t have exact measurements I just eyeball it depending on how much chicken I have for how many people I’m serving. If you want to make it spicy I add a few dashes if Tabasco or tapatio.

“I didn’t care for it. It has a weird texture. I thought it would be the same as just pulling the meat off of their roasted chicken but it’s not. But since you bought it! Curry chicken salad is so good! Just minced some red onion and celery add some curry powder and mayo. And I like to add a little mango chutney that I buy just at the regular Market it just adds a nice sweetness to it. Also you can use the chicken to make great BBQ pulled chicken sandwiches. Just add BBQ sauce to it and a little bit of relish to it it’ll make a great BBQ pulled chicken sandwich! I’m telling you the relish is the key”
