Banana Bread
Servings 1 Loaf
Ingredients
Mash :
- 3 Medium-Large RIPE Bananas = 1 1/2 Cups Mashed Bananas
Combine In A Small Mixing Bowl :
- 1 1/4 Cups All Purpose Flour
- 1 Teaspoon Baking Soda
- 1/4 Teaspoon Salt
Combine In A Large Mixing Bowl :
- 1 Stick Of Butter At Room Temperature
- 1 Cup Of Sugar
- 2 Large Eggs At Room Temperature
- 1 Teaspoon Banana Extract or 1 Teaspoon Vanilla Extract Your Choice
- 1/2 Cup Of Chopped Walnuts
Sprinkle On Top Of The Banana Batter :
- 2 Handfuls Of Chopped Walnuts
Instructions
- Pre-heat the oven at 350 degrees.
- Peel and place the bananas in a bowl and mash them with a potato masher. Set aside.
- In a small mixing bowl pour in the flour, baking soda and the salt. Whisk to combine. Set aside.
- In a large mixing bowl place in the butter and sugar.
- Whisk with a hand mixer until butter and sugar are combined.
- Add in one egg along with your choice of banana extract or vanilla extract. Beat well. Then add in the second egg and whisk until well incorporated.Pour in the mashed bananas. Whisk until well combined.

- Pour in the mashed bananas. Whisk until well combined.
- Then add in the flour and fold it into the banana mixture using a spatula. Mix until you no longer see any more raw flour. Do not overmix the batter.
- Add in 1/2 cup of chopped walnuts. Mix and set aside.
- Coat the loaf pan with some butter.
- Pour the batter into the loaf pan and smooth out the top of the batter.
- Throw on a handful or two of chopped walnuts on top.
- Give the pan a few shakes and then a few taps on the counter.
- Place in the oven on the middle rack.
- Bake for 50 minutes and then place a sheet of aluminum foil over the banana bread.
- Then bake for another 15 minutes or until it is nicely browned on top.
- Place on the counter to cool for 30 minutes.
- Remove from the pan.
- Then slice and serve.
Notes
The batter can also be poured into a muffin tin but it will not take as long to bake as in a loaf pan. If you are going to use a muffin tin then you will only need to bake it for about 30 to 40 minutes.
