Braised Bacon
Ingredients
To make the caramel:
- 2 Tablespoons Sugar
Add to the pot:
- 1 Package Of Bacon Cut into smaller pieces
- 3 Garlic Cloves Minced
- 1 Tablespoon Fish Sauce
- 1 Tablespoon Sugar
- 1 Large Carrot Peeled and thinly sliced = 1 cup sliced
- 2 Cups Hot Water
Garnish:
- A Handful Of Chopped Green Onions
- Sprinkle of Black Pepper
Serve with:
- White Rice
- Sliced Japanese Cucumbers
- A Thai Chili Pepper
Instructions
- Fill a kettle with 2 cups of water and bring it to a boil.
- Cut the bacon into smaller pieces.
- Peel and thinly slice the carrot.
- Mince the garlic cloves.
- Chop the green onions.
- Slice the Japanese Cucumbers.
- Carmelize the sugar. In a pot on Medium heat melt 2 tablespoons of sugar. Once the sugar starts to melt swirl it around the pan. During this entire process do not use a spoon or any utensil to stir the sugar. Only pick up the pan and swirl the melted sugar until it has all dissolved.
- Once the melted sugar has reached an amber color and begins to smoke add in the bacon. Be very careful as the carmelized sugar can quickly burn within seconds. Then stir the bacon for 1 minute .
- Then add in the minced garlic and stir for 1 minute.
- Add in 1 tablespoon of fish sauce .
- Also add in the carrots and cook for 5 minutes.
- Then pour in the hot water from the tea kettle.
- And 1 tablespoon sugar.
- Bring to a boil . Then reduce the heat to Medium-Low and simmer for 15 minutes. Stirring occasionally.
- Cook until the carrots are as tender as you like them then turn off the heat.
- Garnish with chopped green onion. Sprinkle on some black pepper.
- Serve with white rice, sliced japanese cucumbers and a thai chili pepper.
