Chinese BBQ Roast Pork

Ingredients

  • 3 to 4 Pounds Pork Shoulder Butt
  • 1 to 2 Tablespoons Vegetable Oil To brush onto the aluminum lined baking tray or broil pan set

To season the pork:

  • 2 Tablespoons Fish Sauce
  • 1 Teaspoon Maggi Seasoning
  • 2 Tablespoons Oyster Sauce
  • 2 Tablespoons Sugar
  • 1 Teaspoon Garlic Salt
  • 1/4 Teaspoon Black Pepper
  • 4 Tablespoons Char Siu Seasoning
  • 12 Crushed Garlic

Instructions

  • Wash the pork and cut into 3" chunks.
  • Marinate with the fish sauce, Maggi Seasoning, oyster sauce, sugar, garlic salt, black pepper, and Char Siu seasoning. Mix to combine. Then add in the crushed garlic.
  • Cover and refrigerate for a few hours or overnight.
  • When ready to cook, leave the pork on the counter for 30 minutes to bring the pork back to room temperature.
  • Pre-heat oven at 450 Degrees.
  • Skip this next step and go to instruction #7 if you will be using a broil pan set. If you are going to use a BAKING TRAY to roast the pork then line it with some aluminum foil. Brush some oil onto the aluminum foil. Place the pork and the crushed garlic on the lined aluminium baking tray and discard any extra marinade. Then place the baking tray on the top rack of your oven and cook for 30 minutes . Turn the pork over and roast for 20 minutes . Turn the pork over once more for the last time and roast for 10 minutes more. Should be about a total of 1 hour cooking time. Large cuts of meat may take longer to cook. Oven temperature and time may vary due to your type of oven. Adjust accordingly.
  • If you will be using a BROIL PAN SET then brush some oil onto the top rack.
  • Also brush some oil onto the bottom drip pan to prevent the pan from smoking in the oven.
  • Place the meat and the crushed garlic onto the broil pan and discard any extra marinade. Transfer the broil pan to the oven. Place the pan on the highest rack in your oven and roast for 30 minutes.
  • Then flip the meat over and roast for an additional 20 minutes.
  • Check on the meat for doneness and roast for another 5-10 minutes if necessary.
  • Remove the pork from the oven and let it rest on the counter for 10 minutes. Then slice the pork.
  • You can place the roasted pork in between a french baguette, or serve it with white rice and some sliced japanese cucumbers.
