Chorizo & Eggs
Ingredients
- 3-6 eggs ( You can use as many eggs as you'd like. )
- 1 Package of Farmer John's Pork Chorizo ( 9 oz )
- Salt & Black Pepper to taste
Instructions
- Heat a large skillet on Medium-High heat. There is no need to add any oil. Once the pan is warm, squeeze the chorizo out of the package and into the pan.
- Use a wooden spatula to break the chorizo into crumbles and cook the sausage for about 4-5 minutes or until the color has turned a dark brown/red.
- Then crack the eggs into the pan. You can choose the amount of eggs that you want to add to the chorizo.
- Use the spatula to break the yolks and stir the eggs into the sausage.
- Cook until the eggs are no longer runny.
- Season with salt & black pepper to taste.
- You can use the cooked chorizo & eggs to make a breakfast burrito or you can serve it with either white rice or Spanish rice.
- In this photo I had made this dish for a potluck so I had served the chorizo & eggs with some Spanish rice. I had also topped it with some chopped crispy bacon.
Notes
If you are going to serve the chorizo & eggs with white rice you can add 1/2 a teaspoon of Fish Sauce to the chorizo to add a depth of flavor. Fish sauce is salty so do not add to much. Then at the end add salt & black pepper to taste. ( Adding Fish sauce is optional ).
