Costco Cookies – Double Nut, Oatmeal Raisin, Choc Chunk

These are my family’s favorite cookies at Costco ! It includes 3 different varieties of cookies: Double Nut, Oatmeal Raisin and Chocolate Chunk.

You can’t go wrong with any of them as they are all so good !

I had an epiphany one day as I was craving a cookie ice cream sandwich. It is my favorite kind of ice cream and I would typically buy them at Ralphs. But as I was craving it, a light bulb suddenly went off in in my head! I remembered that we had just purchased some cookies at Costco the other day and we also had some vanilla ice cream in the fridge. I decided to put the two together and voila ! I had made my own yummy ice cream sandwich !

If you would like to make one too, you can purchase a tub of vanilla ice cream and a container of chocolate chip cookies on your next Costco shopping trip.

Place the chocolate chip cookies in a zip loc bag and put them in the fridge for at least 3 hours to allow them to harden. You can put in as many cookies as you’d like. Then take the cookies out of the fridge and add some vanilla ice cream between 2 cookies. Use your hand to press down on the top cookie to flatten it a bit . Doing this is optional. If you like a fat cookie ice cream, you can just leave it the way it is. Serve immediately.

I would definitely recommend the both the ice cream and cookies therefore they are Emily approved ! 🙂

Place cookies in a zip loc bag and put them in the freezer for 3 hours for the cookies to harden. Put in as many as you would like.
Take the cookies out of the freezer and place some vanilla ice cream between two cookies.
Place the top cookie over it.
Use your hand to flatten it a bit to make it easier to eat. ( Optional )
Unless you like to eat a thick cookie ice cream then just leave it as is.
Serve immediately.
