Costco Turkey & Provolone Sandwich

I was sad when Costco had removed some of my favorite items from their food court because of the Covid pandemic in 2020. One of which was the Hot Turkey & Provolone sandwich. Luckily, it is an easy sandwich to make with just a few ingredients. In the recipe below, I had made it with mozarella cheese but Costco makes theirs with Provolone cheese. I found that either cheeses will work well for this recipe.

This sandwich was made with Provolone cheese.

COSTCO TURKEY & PROVOLONE SANDWICH

Ingredients

  • 1 Bag Ciabatta ( Artisan ) rolls or Tortas
  • 1 Jar Kirkland Signature Basil Pesto
  • 1 Jar Best Foods Mayonnaise
  • 1 Package Organic Turkey Slices
  • 1 Large Tomato ( Sliced )
  • 1 Red Onion ( Sliced )
  • 1 Package Sliced Provolone or Sliced Fresh Mozzarella Cheese

Instructions

  • Pre-heat oven to 400 degrees F.
  • Lay the rolls flat on the baking sheet. Spread basil pesto on each half. Then spread mayonnaise on the bottom half.
  • Next, place a few slices of turkey on the bottom half along with some slices of tomatoes and some slices of red onions.
  • Then top it with either provolone cheese or mozarella cheese.
  • Heat open faced on baking sheet @ 400 degrees F for 10 minutes. Then turn the dial on the oven to Broil until the cheese is browned and bubbly. The side with just the pesto spread may need to be removed from the oven a minute or two before the other side with the cheese on it. Please keep a close eye on the sandwich to prevent it from burning.
  • Assemble sandwich.
