Egg And Avocado Toast

Ingredients
- 2 Slices of 9 Grain Bread Or you can also use Whole Wheat Bread
- 2 Large Eggs Cooked Over Easy
- 1/2 Tablespoon Olive Oil
- 1 Teaspoon Low Fat Cream Cheese
- 2 Handfuls of Fresh Spinach Leaves
- 1/2 Of An Avocado Thinly Sliced
- 1 Handful of Cherry Tomatoes Sliced Into Halves
- Salt And Black Pepper To Taste
Instructions
- Lightly toast the 2 slices of bread.
- In the meantime cook the eggs. In a skillet on Medium-High heat add in 1/2 a tablespoon of Olive Oil. Once the oil is hot, crack in 2 eggs and immediately reduce the heat to Medium.
- Cover and cook the eggs for about 3 minutes.
- Then flip the eggs over, cover with a lid and continue to cook for about 15 to 20 seconds.
- Slide the eggs onto a plate and set aside.
- Spread a thin layer of the cream cheese onto the toasted bread.
- Top with a handful of spinach leaves.
- Lay 3 slices of avocado onto the spinach leaves.
- Slide the cooked egg over the avocado slices.
- Season the egg with salt and black pepper to taste.
- Place a few of the cherry tomato halves over the egg. Repeat the toppings for the second slice of toast. Serve open faced and enjoy !
