Egg And Avocado Toast

Ingredients

  • 2 Slices of 9 Grain Bread Or you can also use Whole Wheat Bread
  • 2 Large Eggs Cooked Over Easy
  • 1/2 Tablespoon Olive Oil
  • 1 Teaspoon Low Fat Cream Cheese
  • 2 Handfuls of Fresh Spinach Leaves
  • 1/2 Of An Avocado Thinly Sliced
  • 1 Handful of Cherry Tomatoes Sliced Into Halves
  • Salt And Black Pepper To Taste

Instructions

  • Lightly toast the 2 slices of bread.
  • In the meantime cook the eggs. In a skillet on Medium-High heat add in 1/2 a tablespoon of Olive Oil. Once the oil is hot, crack in 2 eggs and immediately reduce the heat to Medium.
  • Cover and cook the eggs for about 3 minutes.
  • Then flip the eggs over, cover with a lid and continue to cook for about 15 to 20 seconds.
  • Slide the eggs onto a plate and set aside.
  • Spread a thin layer of the cream cheese onto the toasted bread.
  • Top with a handful of spinach leaves.
  • Lay 3 slices of avocado onto the spinach leaves.
  • Slide the cooked egg over the avocado slices.
  • Season the egg with salt and black pepper to taste.
  • Place a few of the cherry tomato halves over the egg. Repeat the toppings for the second slice of toast. Serve open faced and enjoy !
