Egg Salad Sandwich
Servings 5 People
Ingredients
- 10 eggs
- 3/4 Cup Best Food Mayonaise 3/4 Cup to 1 Cup depending on how much mayo you want to add
- 1 Teaspoon Dijon Mustard With Chardonnay
- 1/2 Cup Chopped Green Onions
- Salt & Black Pepper to taste
Instructions
- Place the eggs in a pot in a single layer.
- Pour in enough water to submerse all the eggs. The water should be about half an inch to an inch above the top of the eggs.
- Bring the water to a boil.
- Place a lid on the pot and turn off the heat. Then let the eggs sit in the hot water for 10 minutes.
- Place a colander in the sink and fill it with cold water. Transfer the cooked eggs to the colander .
- Add a tray of ice to the water and let the eggs sit in the cold water until cool for about 30 minutes.
- Peel the eggs.
- Place the peeled egg on an egg slicer.
- Press down on the top and it will slice the egg . If you do not have an egg slicer you can just use your knife to cut the eggs.
- Then take the sliced egg and turn it sideways.
- Press down on the top once again and this time you will have a chopped egg.
- Place the chopped eggs in a bowl.
- Add in the mayonaise and stir.
- Toss in the chopped green onions and stir.
- Add in the Dijon Mustard With Chardonnay and stir. You can substitute this with mustard or regular Dijon Mustard.
- Season generously with salt and black pepper to taste and stir. Also sprinkle on some Paprika but do not stir it in. Just sprinkle some Paprika on top of the egg salad and serve.
- Serve on top of white or wheat bread.
Notes
For some crunch you can also add in a handful or two of chopped celery to your egg salad.
