I buy these Fresh Additions Fully Cooked Chicken Breast Bites at Costco quite often because they can be added to so many different recipes ! In the picture below, I had used some of the chicken breast bites to make a chicken pesto pasta dish. The chicken breast bites are divided into 10 separate cartons and I had used 3 of them for this recipe below .

CHICKEN PESTO PASTA RECIPE

  • Feeds appoximately 3-4 people.

INGREDIENTS

2 tablespoons extra virgin olive oil

2 tablespoons butter

3 cartons of Fresh Additions Fully Cooked Chicken Breast Bites ( each carton is 3.2 oz )

16 ounces penne rigate pasta

8 ounces white mushrooms

2 handfuls of baby spinach

2/3 cup heavy cream

1/2 cup basil pesto

2 roma tomatoes ( medium diced )

1 handful of shredded parmesan or mozarella cheese ( optional )

INSTRUCTIONS

1 ) Heat 1 tablespoon olive oil in a large deep skillet over medium heat. Toss in the 3 cartons of the chicken breast bites and cook until for about 2-3 minutes until they show some slight color. Remove the chicken to a plate and set it aside. There is no need to clean out the pan ! You can use the same pan to make the sauce !

2) Bring a large pot of salted water to a boil. Add the penne pasta and cook for about 5 minutes. Then start cooking the sauce in a separate skillet. Cook the pasta simultaneously while cooking the sauce so that the pasta can be transferred directly to the other skillet without having to drain the pasta. By the time the sauce is done cooking, the pasta should be done as well.

4) In a medium bowl, stir to combine the 2/3 cup of heavy cream and the 1/2 cup of basil pesto then momentarily set it aside.

5) Back to the large deep skillet, heat a tablespoon of olive oil and 2 tablespoons of butter over medium heat. Add the whole container of mushrooms ( 8 oz ) and cook them about 4-5 minutes or until browned. Then add in 2 large handfuls of baby spinach and all the diced tomatoes. Cook the spinach until half are wilted. Reduce the heat to medium-low then pour in the mixture of heavy cream and basil pesto. Stir to combine everything. Using a slotted spoon or a handheld strainer transfer the pasta directly from the large pot to the skillet. Stir to combine.

6) Add a handful or two of shredded cheese ( mozarella or parmesan ). The cheese is optional.
