Light Avocado Egg Salad

Ingredients

  • 1 Hard Boiled Eggs ( Chopped )
  • 2 Cherry Tomatoes ( Chopped )
  • 1 Small Hass Avocado ( Mashed )
  • 1 Tablespoon Chopped Red Onions ( Reduce amount to 1/2 tablespoon if you don't like a lot of onions )
  • 1 Tablespoon Chopped Green Onions
  • 1 Tablespoon Best Food's Light Mayonaise
  • 1 Large Slice Dave's Killer Bread ( Good Seed Bread )
  • !Top with :
  • 1/2 Hard Boiled Egg ( Chopped )
  • 2 Cherry Tomatoes ( Chopped )
  • Salt & Black Pepper

Instructions

  • Chop the hard boiled eggs.
  • Chop the cherry tomatoes, red onion and green onions.
  • Mash the avocado and combine with the chopped cherry tomatoes, chopped red onions, chopped green onions, chopped eggs and light mayonaise. Gently mix to combine.
  • Spread onto one slice of Dave's Killer Bread ( Good Seed Bread ).
  • Top with more of the chopped cherry tomatoes and chopped hard boiled eggs. Sprinkle on some salt and black pepper to taste. Serve the sandwich open faced.
