Mung Bean Dessert ( Che Dau Xanh )

Ingredients

  • Water
  • 1 Package Mung Beans ( 14 oz )
  • White Sugar ( 1/4 cup + 4 Tablespoons )

Instructions

  • Rinse the mung beans several times until the water is clear.
  • Soak the mung beans in cold water for 4 hours.
  • Place the mungs beans in a pot and fill with just enough water to immerse the mung beans. Bring to a boil then reduce the heat to MEDIUM. Stir often to prevent the mung beans from burning and sticking to the bottom of the pot, Cook for 30 minutes.
  • Fill a tea kettle with water and bring to boil. While cooking the mung beans the water will reduce so you will need to refill the pot several times with HOT water from the tea kettle. Each time only refilling with just enough water to cover the mung beans.
  • After cooking the mungs for 30 minutes, add in the sugar. First add in 1/4 cup of sugar then add in 1 tablespoon at a time until it reaches the sweetness which you desire. I personally added a 1/4 cup of sugar plus 4 tablespoons. You can add more or less to your liking. Then cook for another 10 minutes until the mungs beans are soft.
  • This dessert can be served hot or cold. Although I prefer to serve it cold. 🙂
