Please note that the Youtube video above was created 5 years ago and in that video, I had used some Polish Sausages from Costco. In the recipe below, I am using Farmer John’s Hot Louisiana Smoked Sausages ( also from Costco ) but either sausage will work just fine with this recipe. And you can also choose to use what ever color bell peppers that you desire.
Sausage Skillet With Vegetables
Servings 5 People
Ingredients
Fry The Potatoes:
- 1 Tablespoon Extra Virgin Olive Oil
- 1 Tablespoon Butter
- 5 Red Potatoes ( Leave Skin On And Slice ¼ Inch Thick )
Brown The Sausage:
- 3 Farmer John’s Hot Louisiana Smoked Sausages ( Or 1 Polish Sausage Link - Your choice - Either Sausage Will Work For This Recipe - Slice ½ Inch Thick)
Saute The Vegetables:
- 1 Tablespoon Extra Virgin Olive Oil
- 2-3 Garlic Cloves ( Chopped )
- 1/2 Of A Red Onion (Or you can substitute with a yellow onion - Sliced )
- 3 Ounces Button Mushrooms ( Sliced )
- 1/2 Of A Red Bell Pepper ( Sliced )
- 1/2 Of A Yellow Bell Pepper ( Sliced )
- 1/2 Of A Green Bell Pepper ( Sliced )
Season With:
- 1/4 Teaspoon Chili Flakes ( Optional )
- 1/2 Teaspoon Black Pepper
- 1/2 Teaspoon Seasoning Salt
- 1/2 Teaspoon Garlic Salt
Equipment Needed:
- Large Deep Saute Pan
Instructions
- Slice the sausages 1/2 inch thick. Then set aside.
- Chop the garlic. Then set aside.
- Slice the red, yellow and green bell peppers. Then set aside.
- Slice the mushrooms. Then set aside.
- Wash the potatoes clean and wipe dry. Then slice 1/4 inch thick. I had used 5 potatoes in this recipe but feel free to use less if you'd like.
- In a pan on Medium-High heat, add 1 tablespoon of olive oil and 1 tablespoon of butter. Once the butter has melted, add the potatoes into the pan in a single layer, cover the pan with a lid and fry for about 4 minutes or until browned.
- Flip the potatoes over, cover the pan and reduce the heat to Medium. Fry for 4-5 minutes or until browned.
- Transfer the fried potatoes to a plate lined with paper towels and set aside. Do not wipe the pan clean! There should still be some leftover oil in the pan.
- In the same pan, turn the heat to Medium and add the sausages in a single layer. Cook 3-4 minutes until browned.
- Then turn the sausages over and cook for another 3-4 minutes until browned.
- Transfer to a paper plate lined with paper towels and set aside. Do not clean out the pan!
- Again in the same pan, on Medium-High heat toss in the chopped garlic, sliced red onions and sliced mushrooms. Saute for about a minute.
- Then add in the sliced red bell peppers, sliced yellow bell peppers, sliced green bell peppers, and saute for 5 minutes until slightly tender. If the pan is dry at this point, you can add a little bit more cooking oil.
- Add in the fried potatoes and sausages. Give it a quick toss then add in the seasonings.
- Season with the chili flakes ( optional ) , black pepper, seasoning salt and garlic salt. Give it a mix.
- Then gently toss the potatoes and sausages for 2-3 minutes until they are warmed through and the bell peppers are as tender as you desire.
- Serve with rice.
Notes
You can use Polish sausage or Smoked Sausages for this recipe !
