Stir Fried Water Spinach and Beef - Rau muống xào thịt bò

Ingredients
- 1 LB Eye Of Round Beef thinly sliced
- 1 Bunch of Water Spinach 2 LBS - separate leaves & stems
Marinate the beef with:
- 1/2 Tablespoon Fish Sauce
- 1/2 Teaspoon Maggi Seasoning
- 1/4 Teaspoon Garlic Salt
- 1/4 Teaspoon Sugar
- 1/8 Teaspoon Black Pepper
- 1 Tablespoon Oyster Sauce
Saute the beef:
- 1/2 Tablespoon Vegetable Oil
- 2 Garlic Cloves minced
- 1 Small Shallot chopped
Saute the water spinach:
- 1 Tablespoon Vegetable Oil
- 12 Garlic Cloves crushed
- 2/3 Cups Water
- 1 Tablespoon Chicken Seasoning
- 1 Tablespoon Fish Sauce
Instructions
- Open the package of thinly sliced Eye of Round.
- Cut the beef into smaller pieces.
- Marinate the beef with the fish sauce, Maggi Seasoning, garlic salt, sugar, black pepper and oyster sauce.
- Cover and marinate for 30 minutes.
- Crush 12 garlic cloves and set aside.
- Mince 2 garlic cloves and chop one small shallot.
- Open the package of water spinach.
- Then cut the bottom stems of the water spinach into 3 inch sections . Wash and set aside.
- Wash the upper part of the water spinach as well.
- Pluck the leaves off of the upper part of the water spinach and discard any damaged leaves. Cut the leaves into 3 inch sections.
- Once the leaves have been plucked you will be left with the stems. Again cut the stems into 2 inch sections and add them to the other already cut stems. Keep the leaves separate from the stems.
- In a saute pan on Medium-High heat add 1/2 tablespoon of vegetable oil. Once the oil is hot add in the chopped shallots and minced garlic. Saute for 30 seconds or until the shallots are translucent.
- Add the beef .
- Cook the beef for 1-2 minutes or until it is about 80% cooked through.
- Then transfer to a bowl.
- In the same pan on Medium-High heat add 1 tablespoon of vegetable oil. Once the oil is warm add in the crushed garlic and saute for 30 seconds to a minute or until fragrant.
- Add in the stems of the water spinach.
- Saute for about 2-3 minutes until slightly tender.
- Then add in 2/3 cups of water .
- Also add in 1 tablespoon chicken seasoning.
- Add in the leaves of the water spinach.
- Also add in 1 tablespoon of fish sauce. Then saute for 1 minute.
- Add in the partially cooked beef and saute for 1 minute or until the beef is cooked.
- As soon as there is no more redness in the beef turn off the heat. Do not overcook the beef as it will become tough.
- Sprinkle on some black pepper . Serve with rice.
