Make the jello. In a saucepan, add 2 cups of water and bring it to a boil. Pour the mango gelatin powder into a bowl then pour in the hot water. Stir to dissolve the powder.
Then pour in 2 cups of cold water and stir.
Allow to cool then divide the gelatin equally among the 3 rectangular plastic containers. There should be a little bit more than 1 ½ cups of gelatin in each container.
Cover with a lid and place in the refrigerator overnight.
Make the milk mixture. In a mixing bowl add in 2 cups of whole milk, 1 cup of heavy whipping cream and ¾ cups of sweetened condensed milk. Stir to combine.
Then transfer the milk mixture a different container and place in the refrigerator overnight.
The night before you make the Mango Sago place in the refrigerator the jello, milk mixture, fresh mangos, whipping cream, whole milk , can of condensed milk and the package of Jubes Mango Flavor Nata De Coco ( not included in the photo) to chill overnight.
The day of making the Mango sago drink, cook the tapioca pearls. Pour in 4 cups of water into a sauce pan and bring it to a boil. Then add in a ½ cup of the tapioca pearls.
Bring the water back to a boil and then cover with a lid and reduce the heat to medium low. Cook the tapioca for 15 minutes stirring occasionally.
Then remove the lid. The tapioca should have begun to thicken, reduce the heat to low and continuously stir for 10 more minutes.
Turn off the heat , give the tapioca one last stir then place the lid back onto the pan. Allow the tapioca to sit undisturbed for 10 minutes . Then the tapioca is done once it has turned translucent. So to recap, total cooking time is 25 minutes then cover with lid and let sit undisturbed for 10 minutes on the stove.
Once the tapioca is done cooking, give it one last stir then strain the tapioca. Give it a quick rinse with some cold water.
Then leave the tapioca in the strainer and set it aside.
Strain the mango flavored nata de coco. We will not need the juice of the nata de coco for this recipe so you can either just drink it or discard it.
Dice 4 mangos into small cubes. Use a spoon to scoop out the diced mangos.
Reserve the cubes from 2 of the mangos to top the drinks with at the end. Once cut, set the diced mangos aside.
Once the jello has set, remove from the refrigerator and dice into small cubes.
Use a spoon or spatula to detach the cubes from the container.
You will only need to use the jello in 2 of the rectangular containers. The third container is an extra one so you can do whatever you wish with it. If you want to add it into the milk mixture as well, feel free to do so. Although, I personally think that it would be too much jello in the milk mixture.
Once the milk mixture is cold, remove from the refrigerator and give it a stir. Then pour it into a large mixing bowl.
Add in the tapioca pearls and stir to break them apart.
Add in the diced mangos from the 2 fresh mangos that you had cut earlier and stir.
Add in the 2 containers of diced jello and stir.
Lastly, add in the Jubes Mango Nata De Coco and stir.
Taste and adjust the drink. If you would like it to be sweeter than add more of the sweetened condensed milk. If you would like it to be thicker than add more of the whipping cream.
Pour into a cup and top with some diced mangos
You can serve this drink immediately. If you would like for it to be colder then place in the refrigerator for an hour or more.
