Heat a large skillet on Medium-High heat. There is no need to add any oil. Once the pan is warm, squeeze the chorizo out of the package and into the pan.
Use a wooden spatula to break the chorizo into crumbles and cook the sausage for about 4-5 minutes or until the color has turned a dark brown/red.
Then crack the eggs into the pan. You can choose the amount of eggs that you want to add to the chorizo.
Use the spatula to break the yolks and stir the eggs into the sausage.
Cook until the eggs are no longer runny.
Season with salt & black pepper to taste.
You can use the cooked chorizo & eggs to make a breakfast burrito or you can serve it with either white rice or Spanish rice.
In this photo I had made this dish for a potluck so I had served the chorizo & eggs with some Spanish rice. I had also topped it with some chopped crispy bacon.
