Instructions
Crack the eggs into a bowl and add in the fish sauce (optional). Whisk to combine. Set aside.
In a pan on Medium High heat pour in the cooking oil. Once the oil is hot add in the minced garlic and saute for 5- 10 seconds.
Add in the cabbage and saute the cabbage for about a minute or until it has soaked up all of the oil.
Pour in the water and saute the cabbage for about 3-4 minutes or until it has softened. You can add an extra tablespoon or two of water to soften up the cabbage even more if you'd like.
Pour in the beaten eggs. Stir to combine. Add in the chopped green onions. Saute the eggs for about 1 -2 minutes until the eggs are no longer runny.
As soon as the eggs are cooked immediately remove from the heat. Do not overcook the eggs.
Transfer to a plate.
Sprinkle on some salt and black pepper to taste.
Serve immediately with white rice and a spicy soy sauce (optional).
First place some rice in a bowl then add the egg and cabbage stir fry on top. Then drizzle a little bit of the spicy soy sauce over the top and enjoy!
For the spicy soy sauce just pour some Maggi Seasoning into a bowl and add in some chopped Thai chilis.
Notes
The total cooking time from start to finish should be about 5 minutes.
