1Bunch of Malabar SpinachCut into smaller sections
1Carton of Soft TofuRinsed and cut into smaller pieces - Optional
Marinate the ground pork with:
1/2Pound Ground Pork
1/2Tablespoon Fish Sauce
1/4Teaspoon Garlic Salt
1/8Teaspoon Black Pepper
1/4Teaspoon Sugar
1Teaspoon Chicken Seasoning
1/2Of A ShallotChopped - Equals 1 Tablespoon Chopped Shallots
Boil water with:
12Cups Water
1Tablespoon Salt
Saute the ground pork mixture with:
1/2Tablespoon Oil
1garlicMinced
To flavor the soup:
1/2Tablespoon Fish Sauce
1/2Teaspoon Sugar
1/8Teaspoon Black Pepper
1 1/2Tablespoons Totole Chicken Base MixChicken Seasoning
Sprinkle of Black Pepper
Instructions
In a bowl combine the ground pork with the fish sauce, garlic salt, black pepper, sugar, chicken seasoning and chopped shallots. Mix well. Marinate for 30 minutes.
Wash the spinach.
Cut about 1/2 an inch off the bottoms of the stems and then cut the rest of the spinach into smaller sections. Set aside.
Pour 12 cups of water into a pot and add a tablespoon of salt. Bring to a boil.
In another pot on Medium High heat add 1/2 a tablespoon of oil. Once the oil is hot add in the minced garlic and saute for about 30 seconds or until fragrant.
Then add in the ground pork mixture .
Saute the pork until it is about 90% fully cooked.
Then pour the pot of hot water into the pot with the ground pork mixture. If you are going to add tofu to your soup then add them in at this step.
Add in 1/2 tablespoon of fish sauce, 1/2 teaspoon of sugar, 1/8 teaspoon of black pepper, and 1 1/2 tablespoons of chicken seasoning. Stir the soup and bring it to a boil. Skim off any foam from the top of the soup.
Once the soup has come to a boil add in the spinach and then gently press it down into the soup. Let it cook undisturbed for 1 to 2 minutes. Do not stir the soup.
