Marinate the pork with fish sauce, garlic salt, black pepper, sugar and chicken seasoning. Let sit for 15 minutes.
In the meantime bring a pot of water to boil.
In a wok on Medium High heat add the cooking oil. Once the oil it hot add in the onions and saute for about 1 minute until slightly translucent.
Add the ground pork to the wok.
While sauteing the pork use the spatula to break the ground pork apart.
Add 1 teaspoon of the Totole Chicken Base Mix and a sprinkle of black pepper.
Saute the pork until about 80% cooked. Then toss in the tomatoes.
Also add in 1/2 teaspoon of salt . Saute the tomatoes until slightly cooked for about 2 minutes.
Then add the fried tofu and toss together.
Pour in the hot water and bring it to a boil.
Add in 1 tablespoon of chicken seasoning, 1 teaspoon of salt, 1 teaspoon of fish sauce and stir.
Once the soup has come to a boil reduce the heat to Medium Low.
Cover and simmer for 15 minutes.
Skim off any foam from the top of the soup and discard.
After the soup has simmered for 15 minutes, turn off the heat and leave the soup on the stove covered for another 15 more minutes.
Then ladle the soup into a bowl and garnish with some chopped cilantro and chopped green onions. Serve with white rice.
