Vietnamese Banana Cream Popsicle

Banana Ice Cream Pops

Ingredients
  

  • 1 Bunch Manzano Bananas
  • 1 Package Frozen Shredded Coconuts 7 oz
  • 1 Cup Crushed Roasted Peanuts
  • 12 Popsicle Sticks
  • Saran Wrap
  • 1 Can Coconut Milk 14 oz
  • Pinch of salt
  • 3 Tablespoons Sugar

Thickener:

  • 3 Tablespoons Tapioca Starch
  • 6 Tablespoons Cold Water

Instructions
 

  • In a bowl mix the tapioca starch with the cold water. Stir to dissolve the tapioca starch and set aside.
  • In a saucepan on Medium Low heat add in the coconut milk, salt and sugar. Stir to dissolve the sugar.
  • Then gradually pour in the tapioca starch mixture and stir.
  • Once all of the tapioca starch mixture has been poured into the pan turn the heat up to Medium High.Continue to stir until it has thickened.Then remove from heat.
  • Place a banana on a sheet of saran wrap and slightly flatten it.
  • Spread on the thickened coconut milk.
  • Next sprinkle on a handful of the shredded coconuts .
  • Add the crushed peanuts..
  • Then flip the banana over and repeat the process .
  • Wrap the banana in saran wrap and freeze for 4 hours.
