Homemade Waffles
Ingredients
Wet Ingredients:
- 1/2 Stick of Butter - melted
- 2 XL eggs Yolks separated from the egg whites
- 1 Teaspoon vanilla extract
To make the Buttermilk:
- 1 1/2 Cups milk
- 1 Tablespoon PLUS 1/2 Teaspoon Apple Cider Vinegar
Dry Ingredients:
- 2 Cups Baking Flour
- 2 Teaspoons Baking Powder
- 1/2 Teaspoon Baking Soda
- Pince of Salt
- 2 Tablespoons sugar
For the waffle iron:
- 1 Cooking Oil Spray
Instructions
- In a small bowl add 1/2 a stick of butter . Cover and microwave for 30 seconds to melt it. Remove from the microwave and give it a stir. Set it aside and let it cool.
- Next make some homemade buttermilk. In a bowl add the milk and microwave it for 45 seconds. Add in the apple cider vinegar and stir. Then let it sit for 5 minutes.
- In a medium mixing bowl combine all of the dry ingredients. Add in the baking flour, baking powder, baking soda, salt , and sugar. Then whisk to combine everything. Set aside.
- Next in two separate bowls , separate the egg yolks from the egg whites. Beat the egg yolks then add in the buttermilk and stir . Add in the vanilla extract and stir. Then add in the melted butter. Stir and set aside the bowl.
- Next sift the flour mixture into a large bowl and pour in the wet mixture. Whisk to combine everything. Stop whisking once you no longer see any raw flour. Let the batter rest for 20 to 30 minutes.
- Once the batter has rested beat the egg whites with a hand mixer until soft peaks form.
- Fold the beaten egg whites into the batter and becareful not to over mix it.
- Pre-heat the waffle iron on the lowest setting. Once the light indicator turns green then the waffle iron is ready. Spray the waffle iron with some cooking oil. Then add the batter to the waffle iron. Close the waffle iron. Adjust the cooking temperature to your desired setting. Once the setting has been adjusted flip the waffle iron over. Once the ready light indicator has turned green then turn the waffle iron over once again. Remove the waffle from the waffle iron and transfer to a cooling rack.
- Serve immediately while hot.
