How to boil Rice Noodles

Ingredients
  

  • 1 Package of Rice Stick Noodles
  • Water

Equipment Needed:

  • 12 Quarts Stock Pot
  • 2 Large Colander and Bowl Set

Instructions
 

  • Fill a large stock pot with water and bring it to a rolling boil.
  • In the meantime place a colander in the sink with a bowl under it and fill it with some cold water .
  • Once the water in the pot has come to a boil add in the noodles. You may need to split up your noodles and cook them in 2 batches if your pot is not very big. There needs to be enough water in the pot to completely submerse the noodles and enough room for them to move around freely. If there is not enough water in your pot the noodles may turn out sticky.
  • Let the water come back to a boil. Once it has come back to a boil slightly reduce the heat so that it does not boil over.
  • Use your chopsticks and gently separate the noodles a bit.
  • After cooking the noodles for about 3 to 4 minutes check to see if they are done. Taste for tenderness. Be careful not to overcook the noodles as they can break apart easily and can become mushy. The noodles should only take about 5 minutes to cook.
  • Once the noodles are about 95% done cooking turn off the heat and cover the pot with a lid. Let the noodles sit in the pot for 1 minute.
  • Drain the noodles then dump the noodles into the colander bowl filled with cold water. Use your hands or chop sticks to swish the noodles around a bit to remove any starch.
  • Rinse the noodles under some cold running water 3-4 times until the water turns clear.
  • Next fill the colander bowl with some hot tap water. Once the noodles feel warm, turn off the water and drain.
  • If you have cooked an entire package of noodles then it is best to split the noodles into 2 colanders to allow them to air dry . If you just use one colander then the noodles on top will dry and the other half on the bottom will still be wet. Make 4 mounds of noodles in each colander . Doing this will prevent one big clump of noodles and will make it easier for you to remove them from the colander.
  • Place on the counter for 30 to 45 minutes to air dry. Come back every 5 minutes or so to fluff up the noodles .
  • Once they are completely dry, you can place them in a plastic container and cover with a lid for later use. You can keep them this way for a few hours.
  • Once you are ready to use the noodles, if they are cold you can microwave them for 30 seconds to a minute to bring them back to room temperature. These rice stick noodles can be used for Vietnamese Spring Rolls and many other Vietnamese dishes !
