Leftover Rotisserie Chicken

Ingredients
  

  • Leftover Rotisserie Chicken
  • olive oil
  • Maggi Seasoning ( Or your favorite soy sauce )

To make a rotisserie chicken sandwich :

  • 2 Slices of Dave's Killer Bread ( Organic Good Seed's Bread - Untoasted )
  • 1 Teaspoon Light Mayonaise
  • A Handful of Fresh Spinach

To make a rotisserie chicken rice dish:

  • 1 Package of Quinoa & Brown Rice With Garlic ( 8.5 oz )
  • A Handful of Fresh Spinach
  • Siracha or Chili Garlic Paste ( Optional )

Instructions
 

  • Saute the leftover rotisserie chicken in a little bit of olive oil over medium-high heat. Add a splash of soy sauce and saute the chicken for about 2-3 minutes. Remove from the pan and let cool.

Rotisserie Chicken Sandwich

  • Spread some light mayonaise onto the bread.
  • Add a handful of fresh spinach.
  • Top with the shredded chicken.
  • Place the other slice of bread on top and eat !

Rotisserie Chicken Rice Dish

  • Heat the brown rice according to the directions on the back of the package.
  • Once the rice has been heated immediately add in a handful of spinach and toss to slightly cook the spinach. Then top with the rotisserie chicken. Add some Siracha or Chili Garlic Paste for some heat if desired.
