Vietnamese Pork Omelette Recipe

Pork Omelette

Ingredients
  

  • 1/2 Pound Ground Pork
  • 1/2 Tablespoon Fish Sauce
  • 1/4 Teaspoon Garlic Salt
  • 1/4 Teaspoon Sugar
  • 1 Teaspoon Totole Chicken Flavor Base Mix
  • 1/8 Teaspoon Black Pepper
  • 1/2 Tablespoon Minced Garlic 2 Garlic Cloves
  • 1 Tablespoon Chopped Shallots
  • 2 Tablespoons Chopped Green Onions
  • 3 Large Eggs
  • 1 Tablespoon Vegetable Oil

Soak for 10 minutes:

  • Boiling Water
  • 1/4 Cup Pre-Shredded Dried Black Fungus Mushrooms Soak and chop. Will need 2 tablespoons of the chopped mushrooms.
  • 1 Bundle Vermicelli Bean Thread Noodles Soak and chop. Will only need 1/4 cup of the chopped noodles.

Instructions
 

  • Place the dried black fungus mushrooms and the bean thread noodles each into its own bowl.
  • Then fill the bowls with hot boiling water. Let the mushrooms and noodles soak in the hot water for 10 minutes.
  • Drain the mushrooms and noodles. Then rough chop them . Measure out 2 tablespoons of the chopped black fungus mushrooms and 1/4 cup of the chopped bean thread noodles as that is the amount needed for this recipe. Discard the rest or save any extra mushrooms or noodles for another recipe. Then set both ingredients aside.
  • In a bowl combine the ground pork with the fish sauce, garlic salt, sugar, Totole Chicken Flavor Base Mix, black pepper, minced garlic, chopped shallots and chopped green onions.
  • Also add in the chopped mushrooms and chopped noodles. Mix to combine.
  • Lastly crack in 3 eggs into the pork mixture.
  • Use a fork to mix the eggs into the pork mixture.
  • In a skillet on Medium-High heat add a tablespoon of cooking oil.
  • Once the oil is hot, pour in the pork mixture and immediately reduce the heat to Medium Low. Use a spoon or spatula to spread the pork mixture out evenly onto the pan.
  • Cover and cook the omelette for about 6 minutes or until the bottom of the omelette is browned.
  • Just before flipping the omelette over to the other side, sprinkle some black pepper onto the omelette.
  • Then flip the omelette over and cook it UNCOVERED this time for about 5-6 minutes or until once again the bottom of the omelette is browned.
  • Transfer to a plate and serve with white rice.
