Slice the sausages 1/2 inch thick. Then set aside.
Chop the garlic. Then set aside.
Slice the red, yellow and green bell peppers. Then set aside.
Slice the mushrooms. Then set aside.
Wash the potatoes clean and wipe dry. Then slice 1/4 inch thick. I had used 5 potatoes in this recipe but feel free to use less if you'd like.
In a pan on Medium-High heat, add 1 tablespoon of olive oil and 1 tablespoon of butter. Once the butter has melted, add the potatoes into the pan in a single layer, cover the pan with a lid and fry for about 4 minutes or until browned.
Flip the potatoes over, cover the pan and reduce the heat to Medium. Fry for 4-5 minutes or until browned.
Transfer the fried potatoes to a plate lined with paper towels and set aside. Do not wipe the pan clean! There should still be some leftover oil in the pan.
In the same pan, turn the heat to Medium and add the sausages in a single layer. Cook 3-4 minutes until browned.
Then turn the sausages over and cook for another 3-4 minutes until browned.
Transfer to a paper plate lined with paper towels and set aside. Do not clean out the pan!
Again in the same pan, on Medium-High heat toss in the chopped garlic, sliced red onions and sliced mushrooms. Saute for about a minute.
Then add in the sliced red bell peppers, sliced yellow bell peppers, sliced green bell peppers, and saute for 5 minutes until slightly tender. If the pan is dry at this point, you can add a little bit more cooking oil.
Add in the fried potatoes and sausages. Give it a quick toss then add in the seasonings.
Season with the chili flakes ( optional ) , black pepper, seasoning salt and garlic salt. Give it a mix.
Then gently toss the potatoes and sausages for 2-3 minutes until they are warmed through and the bell peppers are as tender as you desire.
Serve with rice.
