Crack the eggs into a bowl and add a splash of fish sauce (optional ). Whisk to combine. Then set aside.
In a non-stick wok or skillet add 2 tablespoons of vegetable oil and turn the heat on to Medium-High.
Once the oil is hot add the beansprouts and saute for about 2-3 minutes until they are slightly cooked.
Pour the beaten eggs over the beansprouts and add the chopped green onions.
Saute for about 2-3 minutes until the eggs are cooked.
Season with salt and black pepper to taste.
Serve immediately with white rice .
Pour some Maggi Seasoning or Soy Sauce into a small bowl and add some chopped Thai Chilis.
Drizzle a bit of the sauce over the rice with the egg and beansprouts stir fry.
