Place the ground pork in a bowl and add in the fish sauce, garlic salt, black pepper, chicken seasoning, sugar and chopped shallots. Mix and let marinate for 30 minutes.
Then separate the pork into smaller pieces. Set aside.
Wash the chrysanthemums and cut into 1 to 1 1/2" inch lengths. Discard the bottom stems. Set aside.
In a soup pot bring the water to a boil. Add the salt and chicken seasoning. Stir.
Once the water has come to a boil add the pieces of marinated ground pork and bring back to a boil.
Remove any foam from the top of the soup.
Once the soup has come to a boil add in the chrysanthemums. Gently press down on them with tongs. Then flip them over and turn off the heat. Do not stir the soup.
Move the soup pot over to a different burner.
Let the soup sit for a few minutes before serving.
Garnish with chopped green onions. (Optional )
Sprinkle on some black pepper.
