Make some homemade buttermilk. In a bowl add the milk and apple cider vinegar. Stir and let sit for 5 minutes.
In a bowl crack the eggs and whisk. Then pour the buttermilk in with the beaten eggs and whisk. Add in the brown sugar and whisk. Add in a pinch of salt, vanilla extract and the ground cinnamon. Whisk to combine.
Transfer the egg mixture to a baking dish.
Butter the griddle and turn the heat on to Medium.
Once the griddle is hot, dunk the bread into the egg mixture .
Then flip the bread over . Do not over saturate the bread. Let some of the egg mixture drip off of the bread before placing it onto the griddle.
Each time BEFORE placing a new slice of bread into the egg mixture, be sure to add 1/4 teaspoon of cinnamon first otherwise the next slice of bread may not have any cinnamon on it.
Once you have placed the bread onto the hot pan immediately reduce the heat to Medium Low.
Move the bread around the pan so that it browns evenly and cook it until it is nicely browned. It should take about 5-7 minutes.
Then flip the bread over and again move the bread around the pan to brown evenly. Once both sides of the bread is nicely browned, transfer to a plate.
Top with your choice of fruit: strawberries, blue berries, bananas
Sprinkle on some powdered sugar and serve with maple syrup.
Serve immediately.
