Cut your baby banana in half lengthwise .
Then place one of the halves on a sheet of parchment paper.
Fold the parchment paper over and slightly flatten the banana with the backside of a knife.
You can also just use your palm to press down on the banana as well.
Pour the brown sugar into a container or dish . Roll the banana around in the brown sugar. Set aside.
Remove one spring roll wrapper from the package at a time and place it on a cutting board. Keep the rest in a zip loc bag or place a damp towel on top of the stack to prevent them from drying out.
Place a small handful of the shredded coconuts onto the spring roll wrapper.
Then place the coated banana onto the bed of shredded coconuts. Next place another small handful of the shredded coconuts on top of the banana.
Now fold the sides of the spring roll wrappers in toward the center.
Fold the bottom up and it should look like an envelope.
Wet the top section of the spring roll wrapper with water to seal it.
Then roll it all the way toward the top section to complete the roll.
In a wok add the cooking oil and turn the heat on to Medium. Check to see if the oil is ready by placing a wooden chopstick into the oil. If bubble forms around the chopstick then the oil is ready.
Once the oil is hot place the wrapped bananas into the oil. Fry for 2-3 minutes or until it is golden brown.
Then turn the wrapped bananas over and fry for another 2-3 minutes until golden brown as well.
Remove from the oil and place on a sheet of parchment paper to drain. Do not place on a plate lined with paper towels because the fried bananas will stick to them.
You can serve them plain or top with some powdered sugar.
They can also be served with a side of vanilla ice cream !
