Cut up the strawberries and place into a bowl. Sprinkle the sugar onto the strawberries and mix. Adding the sugar is optional. Set aside.
For the dry ingredients in a bowl add the flour, sugar, baking powder and salt. Stir to combine .
For the wet ingredients crack the eggs into a bowl and beat. Then add the milk and vanilla extract. Stir to combine .
Pour the egg mixture into the bowl of dry ingredients.
Stir until the batter is smooth.
Fill a wok with 6 cups of cooking oil and turn the heat on to Medium High.
Pour the batter into a measuring cup or any container with a spout. Pour 1 cup of batter into the measuring cup for a small to medium sized funnel cake. Pour 1 1/2 cups of batter into the measuring cup for a large to extra large sized funnel cake.
Once the oil is hot pour the batter into the pan . Start in the center and then swirl the batter around in a circular motion. Cook the funnel cake for about a minute or two until it is brown on the bottom.
Flip the funnel cake over and cook for about 1 minute or until the bottom is once again browned.
Remove from the oil and place on a paper towel to drain.
Dust with the powdered sugar.
Top with the whipped cream and add the cut up strawberries. Dust some powdered sugar over the strawberries ( optional ) and serve immediately.
