Make a spicy soy sauce (Optional ) . In a bowl combine the Maggi Seasoning, sate sauce, sugar, water and siracha. Stir to combine. Set aside.
Use your hands to tear the thinly sliced beef into 1/2 or 1/3 of its size.
In a bowl combine the beef with the fish sauce, Maggi Seasoning, oyster sauce, sugar, garlic salt, and black pepper. Mix well. Then add in the minced garlic and chopped shallots. Mix again. Marinate for 30 minutes. Set aside.
Wash the bean sprouts and chinese chives. Cut about 1/2 an inch off the bottom of the chinese chives. Then cut into 1" inch sections. Set the bean sprouts and chinese chives aside.
Slice the onion. Set aside.
Fill a pot with some water and bring it to a boil. Once the water has come to a boil add in the noodles. Cook the noodles for about 3 to 4 minutes. Becareful not to over cook the noodles. Drain in a colander and set aside. You do not need to rinse the noodles.
In a pan on High heat add the cooking oil. Once the oil is hot add in the sliced onions. Saute for about 1-2 minutes until they are translucent.
Then add the beef. Spread the beef around the pan and let it cook for about 2-3 minutes undisturbed . Do not stir or flip the meat.
Once the meat has browned, flip the meat over and add in the oyster sauce. Stir and saute the beef until it is about 90% fully cooked.
Turn off the stove and let the residual heat finish cooking the beef. If you over cook your beef it will become tough. Pour the beef into a bowl and set it aside. Do not clean out the pan.
In the same pan add 1 1/2 tablespons of cooking oil and turn the heat on to Medium . Once the oil is hot add in the noodles and fried tofu (optional). Toss the noodles. Then add in the garlic salt, Maggi Seasoning and the sesame oil. Toss the noodles again.
Add in the bean sprouts and continue to toss the noodles for about 1-2 minutes until the bean sprouts are slightly cooked. T
Then throw in the chinese chives and cook for about 1 minute. Return the cooked beef to the pan. Toss to combine.
Return the cooked beef to the pan and toss to combine.
Transfer to a plate. Sprinkle on some black pepper and garnish with cilantro.
Serve immediately.
Drizzle some of the spicy soy sauce over the noodles. If you do not wish to make the spicy soy sauce you can pour some Maggi Seasoning into a bowl and just add in some chopped Thai chilis . If you cannot eat spicy foods then you can just drizzle some Maggi Seasoning over the noodles.
