Massaged Kale Salad

Alright, let me start out by saying that this salad is not for everyone. Kale is slightly bitter so if you’re not into bitter foods than this salad is not for you. But if you do enjoy bitter foods than this salad is delicious !

I find that a massaged kale salad is the best way to eat it ! If you don’t massage the kale, it is a bit tough to chew and is not as pleasing. Massaging the kale softens it and it also makes it easier for the kale to absorb some of the dressing.

Some people will add salt to the kale when massaging it to break down the kale but I find that it is not necessary. The salt just makes the salad salty. I just simply add some of the Balsamic Vinaigrette dressing when massaging the kale and that seems to do the trick without making the salad saltier.

I’ve added some of my favorite ingredients to make this the perfect kale salad ! You get a little bit of everything in it ! Sweetness from the mandarin oranges and dried cranberries, saltiness from the honey roasted almonds, tanginess from the Balsamic Vinaigrette dressing and a bit of bitterness from the kale !

Massaged Kale Salad

Ingredients
  

  • 1 Package of Chopped Kale ( 8 oz )
  • 1 Bottle of Newman’s Own Balsamic Vinaigrette Dressing ( 16 oz )
  • 1 Package of Dole Mandarin Orange Cups In 100% Fruit Juice ( Drained )
  • A Handful of Dried Cranberries
  • A Handful of Honey Roasted Sliced Almonds

Instructions
 

  • Drain the juice from 1 of the mandarin orange cups and set the mandarins aside.
  • Pour the chopped kale into a large mixing bowl.
  • Discard any stems as they are hard to chew.
  • Add a splash ( 2-3 tablespoons) of Balsamic Vinaigrette dressing. Adding in a little bit of the dressing will help wilt the kale.
  • Massage the kale with your hands by grabbing a bunch and squeezing them for about 2-3 minutes or until they have softened. They will shrink down in size.
  • Then add in a handful of dried cranberries and massage the salad for about a minute until the dried cranberries are slightly softened.
  • Pour in a little bit more of the Balsamic Vinaigrette dressing just enough to coat the entire salad.
  • Then add in a handful of the Dole mandarin oranges and a handful of the honey roasted sliced almonds.
  • Use a pair of tongs to toss the salad.

Notes

This recipe is meant to serve as a side salad.
In this recipe 8 ounces of kale is enough for 4 people as a SIDE dish.
Just figure 2 ounces of kale per person.
